Ingredients

  • 2 1/2 cups Dark Chocolate (85%), chopped

  • 2 1/2 Tablespoons [1 + 1 1/2] Coconut Oil, melted

  • 3/4 cup Peanut Butter, unsalted and unsweetened

How To Make

  1. Line the tray: Place muffin liners into a cupcake tray to prep for filling.

  2. Melt the chocolate: Gently melt dark chocolate with 1 tablespoon of coconut oil in a small saucepan over low heat until smooth.

  3. Add the first chocolate layer: Spoon about 1½ tablespoons into each liner to cover the bottom. Chill in the fridge for 10 minutes.

  4. Make the peanut butter mix: In a bowl, stir peanut butter with the remaining coconut oil until smooth and creamy.

  5. Layer the filling: Add a spoonful of the peanut butter mixture over the chilled chocolate in each cup.

  6. Finish with chocolate: Pour the remaining melted chocolate over each one to seal the cups.

  7. Set and store: Refrigerate for 15 minutes, then chill for a few hours until the chocolate peanut butter cups are fully set.
