Ingredients

  • ¾ cup (180g) Tahini

  • 1 cup (100g) Almond Flour

  • 1 Teaspoon Salt

  • 1 Teaspoon Baking Soda

  • 1 Egg

  • ¼ cup (60ml) Almond Milk

  • 1 Teaspoon Vanilla Extract

  • 3–4 Tablespoons (36–48g) Erythritol

  • Sesame Seeds, for garnish

How To Make

  1. Preheat the oven: Preheat your oven to 175 degrees C [350 F]. Line the baking sheet with parchment paper.

  2. Mix the dry ingredients: In a medium mixing bowl, combine the following dry ingredients: almond flour, salt, and baking soda.

  3. Combine the wet base: In a large mixing bowl, combine the wet ingredients: tahini, egg, almond milk, vanilla extract, and sweetener.

  4. Make the dough: Add the dry ingredients to the wet ingredients and stir until the batter is smooth and the ingredients are well incorporated. 

  5. Shape the cookies: Scoop out tablespoon-sized scoops of dough and roll them into balls. Roll each ball in the sesame seeds and form nine flat cookies on the baking sheet.

  6. Bake the cookies: Bake the cookies for 15–17 minutes and let them cool completely.
